Strawberry-Lemonade Mini Muffins

Our friends over at Party Pinching created the ideal treat to enjoy on a hot summer day! Using Strawberry Shortcake Mini Muffins, these delightful snacks are easy, popable and perfect for any summertime or springtime party to enjoy. Makes 20 Servings

Ingredients:

1 Carton Little Debbie Strawberry Shortcake Mini Muffins

1 Can Lemon Pie Filling or Lemon Curds

Fresh Strawberries

Fresh Lemons

Mint, optional topping

Supplies:

Melon Baller or Knife

Spoon or Piping Bag

Directions:

1. Scoop out the middle of the mini muffin, being careful to not go all the way to the bottom.
2. With a spoon or piping bag, fill the muffin with the lemon pie filling.
3. Cut small slices of the strawberries and lemons for garnish.
4. Top the muffin with the tiny slices and add mint if desired.
5. Repeat for each muffin and enjoy!
